"Guineo" soup

The "Guineo" (a kind of plantain) soup is a very typical dish from the region. It is prepared with plantains, pork's bones (in fact, in Colombia people use this ingredient for many dishes), black potatoes, carrot, pumpkin, green beans, and a tuber called "arracacha". Some water is put in a pot, with the pork's bones; when it boils the plantain is added and then this mixture is left on the fire in order to cook all the ingredients. Then the potatoes, the grated pumpkin, "arracacha", carrot, green beans, and salt. Then when all the rest of the ingredients are well cooked, the soup is ready for serving. It is fine to add a little of cilantro.
